Pectin containing substances such as finely divided sugar-beet p pulp, apple pomace, citrus albedo, are ammoniated at atmospheric pressure and temperature; anhydrous liquid or gaseous ammonia or a concentrated ammoniacal aqueous solution may be employed. According to an example, 75g. finely-divided dried beet pulp of 10 per cent. moisture content was immersed in 750 ml. concentrated aqueous ammonia solution (36 per cent. ammonia) and 150ml. distilled water; the reaction mixture was left to stand at 37 DEG C. for one week after which the solids were recovered by filtration, washed and dried. The ammoniated pulp so obtained analysed 56,7 per cent. water-soluble solids (based on dry weight) compared with 3,2 per cent. for the untreated pulp. |
