PROBLEM TO BE SOLVED: To provide a high moisture-containing gummy candy capable of suppressing remarkably syneresis, melting of a surface, stickiness or the like in spite of containing high moisture with a moisture value of 20 wt% or more, excellent in shape retention property, having jointly fresh and juicy flavor and resilient texture, and suitable for room temperature distribution.SOLUTION: In a high moisture-containing gummy candy, which is a gummy candy having a gummy candy body, and a collagen casing for covering and including the gummy candy body, the gummy candy body has a moisture value of 20 wt% or more, pH of 4.0 or lower, and a water activity value of 0.86 or less, and further syneresis and stickiness of a surface are suppressed.SELECTED DRAWING: None |
