PROBLEM TO BE SOLVED: To produce a seasoning extract that prevents the generation of an odorant with alkali hydrolysis treatment of food raw materials, and has an enhanced flavor.SOLUTION: As hydrolysis treatment, heat alkali hydrolysis treatment is adopted, and acid hydrolysis method is then performed, which results in improvements in unpleasant odors peculiar to conventional protein alkaline hydrolysates or acid hydrolysates, as well as enhanced flavors and excellent persistence of the flavors.SELECTED DRAWING: None |
