<P>PROBLEM TO BE SOLVED: To provide a method for producing baked frozen bread that can obtain bread reduced in surface burning caused by reheating treatment, and the baked frozen bread obtained by the method. <P>SOLUTION: The method for producing baked frozen bread includes sticking a saccharide (excluding a monosaccharide) to the surface of baked bread with an oil and fat amount in surface dough being at least 10 mass% and then freezing the baked bread. The saccharide is preferably sugar alcohol or a disaccharide. The saccharide is preferably liquid. The baked frozen bread is obtained by this method. <P>COPYRIGHT: (C)2013,JPO&INPIT |
