PROBLEM TO BE SOLVED: To provide a classified production method of sucrose fatty acid esters which can readily classify the same into the components with different degrees of esterification.SOLUTION: The invention relates to a classified production method of sucrose fatty acid esters comprising: dissolving the mixture of a plurality of sucrose fatty acid esters having different degrees of esterification into 2-propyl alcohol at the temperature of 50°C or more as a raw material; then, performing solid liquid separation to separate the solid content which is deposited by cooling to 38-45°C and which is rich in a component with high degree of esterification; further, cooling to 0-33°C to separate and collect the liquid content which is rich in a component with low degree of esterification.SELECTED DRAWING: None
