摘要 The present invention pertains to: a spherical gel which exhibits an excellent texture rich in hardness and toughness and which can retain the shape stably; and a manufacturing process therefor. More specifically, the present invention pertains to: a process for manufacturing a spherical gel which includes dropping a dispersion which contains both a heat-coagulable beta-1,3-glucan and a polyvalent metal salt and which has a viscosity of 130 to 3600 mPa·s into a solution which contains a gelling agent that can be converted into a gel through the reaction with ions of the polyvalent metal and which has a temperature equal to or higher than the irreversible heat coagulation temperature of the heat-coagulable beta-1,3-glucan; and a spherical gel obtained by the process.
