The invention relates to a process for the preparation of a product glucoside, preferably an oligosaccharide, in particular cellobiose, and of a co-product, preferably a monosaccharide, in particular fructose, from an educt glucoside, preferably from an oligosaccharide, in particular from sucrose, with enzymatic catalysis. The educt glucoside is thereby first cleaved enzymatically to glucose 1-phosphate and the co-product, and the glucose 1- phosphate is subsequently reacted to give the product glucoside. A reactant for the glucose 1-phosphate is preferably added, preferably a further saccharide, in particular glucose. The co-product formed in the cleavage of the educt glucoside, and the product glucoside formed in the reaction of the glucose 1-phosphate, are preferably each isolated. |
