PROBLEM TO BE SOLVED: To provide a cellulose material in which hydrophilicity or hydrophobicity can be suitably adjusted while having characteristics of cellulose, to provide a cellulose member in which hydrophilicity or hydrophobicity can be suitably adjusted while having characteristics of cellulose, and to provide a recorded matter in which an ink component that is inherently difficult to remove after fixed can be suitably removed.SOLUTION: The cellulose material of the present invention comprises a cellulose material containing a cellulose derivative, in which a functional group that can reversibly perform an oxidation-reduction reaction is introduced into the cellulose derivative.
