<P>PROBLEM TO BE SOLVED: To provide rice grain powder excellent in safety, processing suitability, bioactivity, etc., to provide a method for controlling a particle diameter and a particle diameter distribution of the rice grain powder, and to provide a method for controlling viscosity of the rice grain powder. <P>SOLUTION: This method for processing rice grains includes subjecting rice grains having ≥20 wt.% amylose content in starch to a wet heating step by steam under 0.05-0.5 MPa pressure condition for 1-60 min, and performing a crushing step. The method for controlling a particle diameter and a particle diameter distribution of the rice grain powder, the method for controlling a gelatinization degree and viscosity of the rice grain powder, and the rice grain powder and a processed product obtained by the methods are each provided. <P>COPYRIGHT: (C)2012,JPO&INPIT |
