A process for making a gluten-free filled wafer enrobed with chocolate comprises mixing the biscuit ingredients and extruding under heat into strips of expanded material, rolling to adjust the thickness and cutting to form biscuits, transferring to a conveyor belt for baking and cooling enrobing in chocolate, passing through a cooling tunnel and passing to a packaging line. The main ingredients are those high in starch such as corn, potato, cassava, sorghum or rice. Other ingredients include sources of protein such as powdered milk or cheese whey, sugars such as sucrose or glucose, salt, colourants, and other ingredients to help expansion such as calcium carbonate or baking powder. The resulting biscuit is gluten free and, therefore, suitable for coeliacs. |
