According to an embodiment of the present invention, a method for manufacturing noodles by using sweet potato stems includes the following steps: (a) soaking dried sweet potato stems in water at 50-80°C; (b) steaming the sweet potato stems soaked in water; and (c) boiling the sweet potato stems, steamed in the step (b) and the step (c), for 1-2 hours in water. According to the present invention, nutrients included in the sweet potato stems are not destroyed and additional dough does not need to be made.
