The present invention relate to a method for manufacturing red ginseng concentrate and red ginseng concentrate manufactured by the same. The method for manufacturing red ginseng concentrate includes: a raw material preparation step of inspecting harmful materials of ripened fresh ginseng and apples, selecting fresh ginseng and apples, and washing off impurities from the selected fresh ginseng and apples; a red ginseng extraction step of changing the fresh ginseng to red ginseng by steaming and drying the fresh ginseng, and then extracting active ingredients in a liquid phase by irradiating a mixture of 4-10 wt% of the changed red ginseng and 90-96 wt% of purified water with infrared rays; an apple juice extraction step of extracting the apples into a liquid phase by inserting the apples in a screw-type juicer and crushing and compressing the apples at 50-60 RPM; a sterilization step of removing harmful bacteria by inserting the red ginseng liquid and the apple juice in a sterilizer and operating the sterilizer at 90-110°C for 20-40 minutes; and a concentration step of making the concentrate by mixing the red ginseng liquid and the apple juice at a ratio of 1 : 1 and heating the red ginseng liquid and the apple juice at 80-90°C for 70-95 hours. Therefore, the red ginseng concentrate has enhanced sweet taste and sour taste of the apple without using chemical additives, and does not have bitter taste and thus can be eaten by people of all ages and sexes without hesitation. |
