The present invention relates to an evaporator, a refrigeration device, and a method for controlling the refrigeration device. The evaporator comprises: a refrigerant evaporation part having a flow path through which a refrigerant evaporates; and a phase change material accommodation part coupled to the refrigerant evaporation part and accommodating a phase change material of which a phase is changed according to the latent heat absorbed by the refrigerant, wherein the phase change material can directly come in contact with an outer side of the refrigerant evaporation part within the phase change material accommodation part.
