<P>PROBLEM TO BE SOLVED: To provide a safe, inexpensive and easy means for supplementing the deficiency of female hormone (estrogen) in blood in a middle and advanced aged female in a food shape. <P>SOLUTION: Steamed raw material soybeans are transported to a sterilized chamber, and Rhizopus microsporus var. oligosporus grown in pure culture is added thereto and mixed well. The mixture is inserted into a stainless vat and kept warm at 35°C for 12 h. The resultant product is taken out from an incubator, transferred to a shelf at a room temperature and left there for 24 h. The obtained product is sterilized by putting the product in an oven at 100°C for 1 h after confirming that mycelia have prevailed over the whole. The obtained soybean-fermented product is frozen and preserved. The preserved fermented product is pulverized by adding 75% ethanol in an amount of 1.8 times after thawing, and a supernatant is separated by centrifugal separation. Further a supernatant is separated by the centrifugal separation after adding 50% ethanol in an amount of 1.7 times to the precipitate, and pulverizing the added product. The supernatants obtained by the two-time centrifugal separations are mixed, and heated and concentrated until the content of the solid components becomes 20%.
