The present invention relates to a salted cabbage preparing method reducing harmful ingredients, which simultaneously cooling and washing salted cabbage using cool water after washing the salted cabbage using warm water in a salted cabbage washing process to maintain unique nature and material temperature of cabbage. The present invention slices the cabbage, salts the sliced cabbage and then washing the cabbage, wherein the salted cabbage is washed one or two times using the warm water of 80±10°C to remove harmful ingredients, and instantly washed and cooled two times using normal temperature water, thereby maintaining unique nature and material temperature of the cabbage. |
