摘要 An edible formulation comprises edible fungal particles of a filamentous fungus and calcium ions, preferably between 0.100 and 1 wt% calcium ions on a dry matter basis. The formulation preferably does not include any components derived from animals, such that it is suitable for vegans. Conventionally egg albumin is used to bind together edible filamentous fungi in meat substitute products. The calcium ions increase the firmness and strength of the mycoprotein food product. The formulation may also include at least 50% water, a polysaccharide and an additional protein source, such as potato protein or wheat protein. If calcium chloride is used to supply the calcium ions, acetate ions may also be added to counter the disagreeable taste of the calcium chloride. A preferred formulation includes calcium chloride and calcium acetate. Recipes are provided for vegan pieces, mince, burgers and sausages.
