The present invention relates to a method for manufacturing fermented Dendropanax morbifera LEV. leaf tea and, more specifically, to fermented Dendropanax morbifera LEV. leaf tea made of an extract of Dendropanax morbifera LEV. as a main ingredient, thereby: having excellent anticancer activity and antioxidative activity; helping in invigoration, clarification of blood, improvement of liver functions, enhancement of prostate functions, improvement of blood circulation, enhancement of immune functions, alleviation of arthritis, and alleviation of depressive disorders; and being eaten by consumers without repulsion. According to the present invention, provided is the method for manufacturing the fermented Dendropanax morbifera LEV. leaf tea comprising: a first step of picking a soft part of Dendropanax morbifera LEV. leaves and sorting the same out; a second step of removing moisture from the sorted Dendropanax morbifera LEV. leaves and primarily wilting the Dendropanax morbifera LEV. leaves for 25-35 minutes; a third step of secondarily wilting the Dendropanax morbifera LEV. leaves, has completed the first wilting, at room temperature for 15-18 hours depending on the weather to perfectly remove moisture; a fourth step of rubbing the dried Dendropanax morbifera LEV. leaves with hands or a machine, after the primary and secondary wilting; a fifth step of fermenting the rubbed Dendropanax morbifera LEV. leaves in a fermentation room at 30-35°C for 160-200 minutes; and a sixth step of drying the fully fermented Dendropanax morbifera LEV. leaves in a dryer until the moisture content becomes 5% or lower, after fermentation. |
