The present invention relates to a method for preparing Tarak, or milk porridge by using milk, brown rice wine, and an organic acid, which comprises the following steps of: using milk, brown rice wine, and an organic acid to prepare main Tarak; isolating, culturing and freeze-drying lactic acid bacteria and yeast from the main Tarak; preparing a starter; and culturing milk, the starter, and an organic acid to prepare Tarak. According to the Tarak of the present invention, activity of yeast contained in brown rice wine is suppressed and a starter is used to remove an alcoholic smell of the brown rice wine, thereby providing excellent functionality. In addition, an organic acid except from a vinegar is combined with a fermented solution to improve taste of Tarak. |
