In the present invention, provided is a cutting apparatus for a noodle making machine, which allows noodles extruded from a noodle manufacturing apparatus to be measured and cut by a predetermined weight, thereby allowing quantitative packaging and supply. According to the present invention, the cutting apparatus (3) for the noodle making machine is allowed to quantitatively cut the noodles obtained by continuously extruding dough kneaded with various grains, and comprises: an electronic scale (15) capable of measuring the weight of the cut noodles; a back-and-forth cutter transfer means (16) receiving the signal of the electronic scale (15) and controlled to be moved in the direction in which the noodles are supplied, so as to compensate a difference in a predetermined weight depending on the weight of the noodles measured in the electronic scale (15); a cutting unit (9) installed and fixed on the upper part of the back-and-forth cutter transfer means (16); and a cutter (14) arranged on the cutting unit (9) and elevated by a cutting cylinder (12) to cut the noodles supplied by a transfer means (20). According to the present invention, the cutting apparatus for the noodle making machine can quantitatively cut noodles according to a predetermined weight, thereby allowing accurate quantitative supply. Accordingly, consumer confidence can be enhanced, and work efficiency and productivity can be enhanced. |
