[Problem] To provide a piezoelectric ceramic exhibiting little firing deformation, a manufacturing method therefor, and an electronic component. [Solution] A piezoelectric ceramic 1 comprises multiple crystal grains 2 comprising a lead zirconate titanate-based crystal containing Zn and Bi, and crystal grain boundaries 3 present between the multiple crystal grains 2. The multiple crystal grains 2 include first crystal grains 2a in which the content of Zn and/or Bi on the interior of the crystal grain 2 is less than the content thereof in a region including the crystal grain boundary 3 contiguous with said crystal grain 2. The piezoelectric ceramic 1 exhibits little firing deformation, and is capable of forming electronic components which have little warpage and deformation, even when thin.
