<P>PROBLEM TO BE SOLVED: To provide boiled noodles containing rice flour, suppressing the aging change of texture of the boiled noodles containing rice flour which are distributed after boiled, and to provide a method for producing the boiled noodles containing rice flour, and a method for improving the quality of the boiled noodles containing rice flour. <P>SOLUTION: The boiled noodles containing rice flour are obtained by making noodles after adding lecithin and acid into noodle dough containing rice flour, and boiling the noodles. <P>COPYRIGHT: (C)2013,JPO&INPIT |
