PROBLEM TO BE SOLVED: To provide a method of producing a fermented milk for producing an agitation type fermented milk with the odor of collagen reduced, without use of an oder masking method with a flavor or a food additive or a method of using a proteolytic enzyme.SOLUTION: A method of producing an agitation type fermented milk includes a thermal sterilization step of sterilizing thermally a first preparation containing milk proteins and a second preparation containing collagen peptides, a mixing step of mixing the first thermally sterilized preparation with the second thermally sterilized preparation to obtain a mixed liquid, a fermentation step of forming card by causing fermentation microorganisms to act on the mixed liquid and a crushing step of crushing the card to obtain an agitation type fermented milk. The weight average molecular weight (Mw) of the collagen peptides is 2,000-9,500; the content of the collagen peptides in the agitation type fermented milk is 5.0-7.9 mass%; and the viscosity of the agitation type fermented milk is 2,000-4,500 mPa. |
