The present invention relates to a method for preparing fermented soybean paste using rice bran and polished rice and, more specifically, to a method for preparing fermented soybean paste which has very excellent functionality and is beneficial to health by culturing a soybean paste zymogen using rice bran when manufacturing fermented soybean paste, adding the rice bran in which the zymogen is cultured to hard-boiled rice and aging the same, and using beans roasted before being boiled. According to the present invention, fermented soybean paste which is more beneficial to health and has very excellent taste and flavor can be prepared by containing effective components of rice bran. |
