The present invention provides: a dough completed by adding and agitating kneading water decocted with Lentinus edodes in kneading ingredients prepared by mixing 20-50 g of Lentinus edodes powder dried from Lentinus edodes and pulverized to have a particle size of 0.3-1.5 mm, 150-200 g of egg, 30-50 g of olive oil, and 20-40 g of salt with respect to 10 kg of flour; meat juice in which the dough and Lentinus edodes are brewed; and a method for producing chopped noodles. Nelumbinis Semen or Angelica Utilis Makino may be further included in the kneading ingredients. |
