Discloses a native oilseed protein composition which comprises -a protein content of at least 80 wt%, (on dry matter); -an ethanol content of less than 0.2 wt%, (on dry matter); -an ethanol content of more than 0.001 wt%, (on dry matter); and -a phenolic content of less than 0.1 wt%, (on dry matter) expressed as sinapic acid equivalents. Also discloses a process for isolating native protein from oilseed meal or cake. |
