The present invention relates to a method for preparing noodles, which comprises the following steps of: mixing and stirring 10-40 parts by weight of wheat flour, 0.0005-0.002 part by weight of sodium hydrogen carbonate, 0.001-0.004 part by weight of a salt, 0.5-2 parts by weight of corn starch, and 4-10 parts by weight of water to make dough; aging the dough wrapped with a hemp cloth-wrapper at 0-5°C using a noodle-making machine to prepare noodles from the aged dough; cooking the noodles in a cooking oil of 120-145°C for 7-10 seconds; and drying and aging the noodles. The noodles prepared by the method of the present invention has excellent mouthfeel and good storage stability at a room temperature or under cold storage conditions to be used as noodles for a Korean dish or a Chinese dish. |
