摘要 The present invention relates to a fermentation enzyme food containing red ginseng by complex fermentation of Aspergillus oryzae and lactic acid bacteria and a method for preparing the same. Specifically, the method for preparing a fermentation enzyme food includes: 1) steaming a mixture of red ginseng, brown rice and rice bran to prepare a steamed mixture; 2) inoculating the steamed mixture with Aspergillus oryzae and lactic acid bacteria, followed by fermentation, to prepare a fermented substance; 3) drying the fermented substance to prepare a dried fermented substance; and 4) grinding the dried fermented substance and then processing the dried fermented substance into any one formulation selected from the group consisting of a granule, powder, a pill, a capsule and a tablet. The fermentation enzyme food containing red ginseng obtained by the preparation method of the present invention is useful as a health supplement food because red ginseng saponin is converted into saponin, which can be absorbed in the body, physiologically active materials and fibers of brown rice and rice bran, which are not absorbed well in the body, are degraded and absorbed well in the human body, and superior digestive enzyme activity and anti-oxidant activity are obtained, by complex fermentation of Aspergillus oryzae and lactic acid bacteria.
