摘要 The present invention relates to a method for preparing noodles by using tofu (bean curd) as a raw material, and in particular, to a method for preparing tofu noodles and tofu rice noodles having high tofu content. The present invention provides a method for preparing tofu noodles and tofu rice noodles, and the method for preparing tofu noodlies comprises the following steps of: making dough including 30 wt% or more of whole soybean curd; making noodles from the dough; steaming the noodles at 200-280°C for 3-7 minutes to obtain the steamed noodles. According to the present invention, tofu noodles and tofu rice noodles having 30% or more of tofu (based on whole soybean curd), a good quality of protein, can be prepared to provide good texture, mouthfeel, taste and the like in light of preference, compared to general noodles made from wheat flour. The tofu noodles and tofu rice noodles of the present invention are a nutrient and favorite food to be widely used instead of the general noodles.
