摘要 The present invention relates to a method for preparing red ginseng cheese containing black garlic, and more specifically, to a method for preparing red ginseng cheese containing black garlic, which comprises a step of adding one or more ingredients selected from a black garlic extract, black garlic flakes, a red ginseng or ginseng extract, and gintonin to curd in which whey has been removed in producing cheese. The black garlic extract having maximized ingestion property and efficacy of garlic, the red ginseng or ginseng extract having improved in-vivo absorption rate, and glycolipoprotein isolated from ginseng and including gintonin are included so that the red ginseng cheese of the present invention holds optimal functions of black garlic and saponin to have excellent functionality, and the red ginseng cheese is simple and convenient to distribute and take in, thereby satisfying the needs of contemporary people who prefer functional health food.
