The present invention relates to a meat processing composition. The meat processing composition includes proteins including egg white and whey proteins, and gum as main ingredients. According to the present invention, the meat processing composition maintains heat treatment efficiency even when the composition is injected into meat at an increased injection rate. Accordingly, the meat processing composition can be used to prepare a processed meat product having excellent texture and palatability while increasing production yields. |
