<P>PROBLEM TO BE SOLVED: To provide rice flour for bread and a rice flour composition which show excellent dough properties such as smoothness, hardness, and less stickiness, have a crisp texture, and achieve an excellent volume when used for the production of breads. <P>SOLUTION: Using non-waxy rice as raw material rice, the rice flour is provided which has an average particle diameter of 100-150 μm, 70% or more of which is included in a particle size width of 50-200 μm, and whose damaged starch is less than 5%. <P>COPYRIGHT: (C)2013,JPO&INPIT |
