摘要 The present invention relates to fermented vinegar wherein a grain fermented solution and a fruit fermented solution are mixed, and more specifically, to compound fermented vinegar wherein a glutinous millet fermented solution and a tangerine fermented solution are mixed and fermented with acetic acid. The glutinous millet fermented solution is saccharified and fermented by mixing water and yeast with cooked glutinous millet. The tangerine fermented solution is fermented by mixing sugar with tangerine. The compound fermented vinegar in accordance with the present invention contains organic acid or amino acid of grain vinegar, is nutritionally excellent, and is mixed with a fruit vinegar taste to improve food texture. According to the present invention, fermented vinegar having an excellent sugar content can be provided without adding sugar.
