<P>PROBLEM TO BE SOLVED: To provide a taste improving agent for acidic food and drink, capable of reducing acidity and acid smell specific to an acid preparation contained in acidic food and drink. <P>SOLUTION: The taste improving agent for acidic food and drink contains a lactic fermentation extract obtained by fermenting a yeast extract with lactobacillus, the lactic fermentation extract including 7.5 (w/w)% or more of lactic acid per yeast extract solid content. <P>COPYRIGHT: (C)2013,JPO&INPIT |
