The purpose of the present invention is to provide: a method for producing a beer-like sparkling fermented beverage that has a high pyruvic acid content and excellent stimulating feeling and exhilarating feeling; and a beer-like sparkling fermented beverage which is produced by the production method. A method for increasing the pyruvic acid content in a beer-like sparkling fermented beverage according to the present invention is characterized by comprising at least: a mashing step wherein a fermentation starting material liquid is prepared by boiling a saccharified solution that is obtained by saccharifying a mixture containing at least a grain material and water or a saccharified solution that contains only a saccharide material as the fermentation starting material; and a fermentation step wherein the fermentation starting material liquid obtained in the mashing step is seeded with yeast and fermentation is carried out at 10-15°C. The method is also characterized in that the fermentation starting material liquid before the seeding of yeast has a pH of 5.5-5.8. |
