The invention relates to the synthesis, via two alternative paths, of (3,4-dihydroxyphenyl)glycol (6), a natural product present in the olive tree, and to the synthesis of (3,4-dihydroxyphenyl)diacylglycols (12). Both (6) and (12) can be used as non-steroidal anti-inflammatory drugs. Likewise, hyroxytyrosyl alkanoates and various hydroxytyrosol thioderivatives have anti-inflammatory properties. Furthermore, hydroxytyrosyl acetate reduces the damage caused in the colon of mice in a model of acute colitis induced by dextran sodium sulfate (DSS).
