摘要 Disclosed are a method for manufacturing glutinous rice sundae (Korean sausage) and the glutinous rice sundae manufactured thereby. The method for manufacturing glutinous rice sundae and the glutinous rice sundae in accordance with the present invention comprise the following steps: cleaning pig′s small intestine with salt water, rinsing with clear water, preparing dried glutinous rice, mixing the pig′s small intestine and the glutinous rice with glass noodles and mashed lard, putting the mixture in a pressure chamber, and then steaming at high temperatures; mixing a sundae stuffing by parboiling dried radish leaves in boiling water and then removing water from the same, and mixing minced pork meat, the glass noodles, the glutinous rice, the parboiled dried radish leaves, and chili peppers; preparing the sundae stuffing by blending condiments for sundae including chopped green onions, chopped garlic, ginger juice, pepper powder, and salt and mixing the condiments, the sundae stuffing, clotted blood from pigs, and corn starch; and stuffing the pig′s small intestine, then steaming the same with boiling water to cook the sundae. According to the present invention, the difficulty of stuffing the pig′s small intestine with the sundae stuffing due to stickiness caused by the glutinous rice or the starch ingredient and tearing of the pig′s small intestine can be overcome, and the glutinous rice sundae has its own flavor reducing repulsion toward various cooking oils.
