摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing an acid-free juice, capable of obtaining juice from fruits or vegetables without adding an acid component. <P>SOLUTION: The method for producing the acid-free juice includes: adding an exogenous enzyme with both cellulase activity for degrading cell walls of cells forming a crushed object and pectinase activity for degrading pectin forming the cell walls and producing isolated galacturonic acid to the crushed object obtained by crushing fruits and/or vegetables while leaving the cells of the fruits and/or vegetables to make the crushed object paste or liquid enzyme-treated substance; subjecting the exogenous enzyme in the enzyme-treated substance or in the juice squeezed from the enzyme-treated substance to a deactivation treatment; and loading the deactivated enzyme-treated substance or juice into a container thereafter without adding an acid component. <P>COPYRIGHT: (C)2013,JPO&INPIT
