Improving the yield in the preparation of crystalline alpha-lactose, comprises: (a1) gradually cooling an aqueous lactose solution to 10[deg] C; (a2) separating a first amount of precipitated alpha -lactose crystals from a mother liquor; (a3) mixing the mother liquor with a quantity of a carbohydrate compound such that a solubility product of residual amount of lactose still present in the solution is exceeded; (a4) separating a second amount of precipitated alpha -lactose crystals from the mother liquor; and (a5) combining the two levels of alpha -lactose crystals. An independent claim is included for preparing crystalline alpha -lactose, comprising subjecting a whey to a separation process in which a protein-rich fraction and a lactose-rich fraction is obtained, optionally subjecting the lactose-rich fraction to a demineralization process after the concentration of sparingly soluble salts is precipitated, optionally cooling the demineralized residue after further concentration until the lactose precipitates in crystalline form, the steps of (a1)-(a4), mixing an aqueous solution of lactose with a quantity of a carbohydrate compound such that the solubility product of the amount of lactose in solution is exceeded, gradually cooling the lactose solution to 10[deg] C, and separating the amount of precipitated alpha -lactose crystals from the mother liquor. |
