The utility model relates to a process of making Citron Lemon (Citrus medica) Marmalade comprising the steps of: gathering, washing and peeling citron lemon fruits of good quality; separating the rind with the pulp and slicing the rind into small cubes; soaking the rind for 6-8 hours in a salt solution; slicing and deseeding the pulp; boiling 250 grams of sugar and 750 ml of water to form a thin syrup; soaking the pulp in the thin syrup for 8-10 hours; draining the thin syrup; adding water to the pulp and boiling it for 20-25 minutes; straining the pulp with the water extract; mixing 250 grams pulp extract and 125 grams sugar; bring the mixture into boil; adding the rind into the mixture and cooking it until it reaches thick syrup consistency; skimming off scums from the mixture; and pouring the mixture in a sterilized jar. |
