The present invention relates to a device for removing ginkgo skin. The device comprises: a skin separating unit provided with ginkgos and compressed air, in which a part or entire of mesocarp made of corneum of the ginkgos is broken, and separating the mesocarp and endopleura by the compressed air to form ginkgo grains; a discharge unit connected to a lower side of the skin separating unit, and discharging ginkgo grains; and a discharge unit connected to an upper side and a lower side of the skin separating unit, and suctioning and discharging mesocarp and endopleura which are separated from each other. Ginkgo fruits of a non-dried ginkgo or a refrigerated and dried ginkgo are not broken, and an external surface thereof is not damaged. A taste is not changed, and skin may be automatically removed. |
