摘要 A method of preparing rice noodles includes: a step (S10) of injecting 30 wt% to 40 wt% of rice into water in a state that 60 wt% to 70 wt% of water is contained in a water tank to soak rice in water for 3 to 5 hours; a step (S20) of removing water from the rice soaked in water in the step (S10) in the water tank, scooping out rice using a wicker tray to remove water from rice for 10 to 20 minutes; a step (S30) of finely grinding rice 3 to 5 times by adding 3 wt% to 5 wt% of salt to rice in a process of repeatedly injecting the rice obtained from the step (S20) into a grinder; a step (S40) of steaming rice powder finely ground in the step (S30) at a temperature of 100°C for 20 to 30 minutes to form the ground rice powder in a kneaded state; and a step (S50) of pulling out noodles from a dough obtained in the step (S40) using a rice noodle preparation device to prepare rice noodles. The present invention has effects of adding flavor to noodles by maintaining the viscoelasticity of rice noodles using 100% rice powder such that the rice noodles become more chewy than ordinary noodles; preparing rice noodles which is beneficial to health and is to the taste of consumers; enabling rice noodles to be produced uniformly and hygienically in a forming machine according to a series of automatic processes; and improving productivity and maintaining stable quality of rice noodles by producing the rice noodles in a large amount.
