The present invention relates to a method for producing red ginseng powder with an increased content of ginsenoside Rh1 or Rg2, which comprises the following steps: (1) preparing red ginseng powder by crushing red ginseng into a specific size; and (2) applying heat to the crushed red ginseng powder. The content of ginsenoside Rh1 or Rg2 increases in the red ginseng powder produced by the method of the present invention. Thus, the method of the present invention can be useful in a functional food market associated with the production of pills, tablets, extracts, extracted concentrate, and the like, by using the red ginseng powder itself containing the increased content of ginsenoside Rh1 or Rg2, or by applying the red ginseng powder. |
