摘要 The present invention relates to smoked duck meat aged with pear juice and a method for manufacturing the same. More specifically, the method includes: a first step of providing a salting solution containing raw duck meat and pear juice; a second step of impregnating the raw duck meat with the salting solution; a third step of aging the raw duck meat impregnated with the salting solution; and a fourth step of cooking the aged raw duck meat with smoke. The salting solution includes 0.5-2 parts by weight of the pear juice, 0.2-1 part by weight of plant extract powder, 2-4 parts by weight of seasoning, and 10-20 parts by weight of purified water with respect to 100 parts by weight of the raw duck meat. According to the present invention, utility of duck meat as favorite food is increased by removing odors unique to duck meat and making texture of the meat soft; a color and gloss effect can be increased up to 95% of color and gloss when sodium nitrite is used; and preference of consumers can be provided as the smoked duck meat has an image of healthy food.
