A method for controlling a refrigerating unit in order to carry out a fast freezing of food items comprises an estimation of the temperature of the food item on the basis of the compressor status and of the sensed temperature of a compartment where the food item is placed and an activation of the fast freezing procedure having consecutive steps chosen among different ones on the basis of the estimated temperature. The steps of the freezing procedure comprise a first step in which the use of the maximum cooling capacity of the refrigerating unit for the fast freezing process is avoided, and a second step in which such maximum cooling capacity is used.
