PROBLEM TO BE SOLVED: To provide a process for recovery of betaine from molasses.SOLUTION: The invention relates to a process for the recovery of betaine from a molasses comprising a conversion step in which the molasses is subjected to the action of an enzyme having endo-inulinase activity and/or fructosyltransferase activity to produce a fructan-containing molasses (fructan-molasses), and a separation step in which the fructan-molasses is subjected to a simulated moving bed (SMB) chromatography system using a sodium-form cation exchange resin, thereby obtaining a betaine-containing fraction. |
