本发明公开了果蔬加工过程中农药残留的去除方法,通过果蔬清理、果蔬抛光、超声波消解农药残留,果蔬清洗过程中,10%的醋酸水,10%Nacl或10%Kcl对果蔬的营养与品质并不会产生过多的影响,强酸性电解池中的电解水对果蔬,不仅有一定的去除农药残留的作用,而且有杀菌消毒的功效,本发明工艺流程设计科学,工艺方法合理,生产成本低,消解农药残留有效、可靠。

果蔬加工过程中农药残留的去除方法,其特征在于,包括以下步骤:1)果蔬清洗,先利用10%的醋酸水溶液对果蔬浸泡3‑5h,酸性环境PH为5.5‑6.0,而后将果蔬转移在强酸性电解池中,电解池中为Nacl或Kcl水溶液,电解1‑2h,而后转移到抛光室;2)抛光将一定浓度的臭氧水雾化,喷洒在步骤1)所得的果蔬上,并同时将所述果蔬送入抛光室内抛光;3)超声波消解农药残留,将前道工序所得的果蔬,均匀平坦在果蔬架上,采用在频率20‑33千赫兹、功率60‑9瓦/平方厘米的超声波连续辐照1‑3小时。
