PROBLEM TO BE SOLVED: To provide a dressing which maintains the texture of vegetables contained in a salad or the like and improves the flavor of a flavored oil.SOLUTION: The dressing contains a polyglycerol condensed ricinoleic acid ester and a flavored oil. The dressing contains 0.05 mass% or more and 3 mass% or less of the polyglycerol condensed ricinoleic acid ester relative to the flavored oil and preferably contains an emulsifier with an HLB of 1 to 9 (except for polyglycerol condensed ricinoleic acid ester).
