PROCESSED CUTTLEFISH FOOD IN THE FORM OF AN EYE OF SCALLOP

PURPOSE:Strands of dried or semi-dried cuttlefish are bound to make a processed food in the form of scallop eye with the texture characteristic in scallop eye. CONSTITUTION:Dried or semi-dried cuttlefishes are cut or teared into strands and the strands are coated with a binder such as egg white or lact albumen. Then, the strands are wrapped with a SARAN film or filled in a shrinking film and bound preferably at a compression ratio of about 0.77-0.95 at temperature of about 100-130 deg.C.
