<p>The invention relates to a device for determining food adhesiveness, which is mounted on the bed frame of a universal machine of testing food texture, equipped with a vertical displacement system, a force sensor, a displacement sensor and an electronic computer. According to the invention, the system consists of a metallic cylinder (2) which comprises inside a Peltier element (3) power-supplied from a direct current source (4) controlled by a temperature sensor (5) and an electronic temperature regulator (6), the Peltier element (3) being covered, at the lower side, with a thermal insulation (8) and, at the upper side, making contact with a copper sheet plate (9), the metallic cylinder (2) having, at the upper side, a plane surface on which the food (10) to be tested is spread as a film or as a uniform semisolid layer and it is subjected to a traction strain by means of a metallic disk (11) screwed onto the sensorial system of the universal machine for testing the food texture. The adhesiveness determination is carried out by using the strain diagram: spread - displacement stress, wherefrom the maximum value of the stress reached during testing is determined, said value representing at the same time the adhesiveness value.</p> |
