<p>PURPOSE:To produce a dried apple without causing fading of epidermal dyestuff and browning of flesh, by impregnating a sliced fresh of an apple with a vacuum treating solution by vacuum treatment, and freezing the resultant impregnated flesh. CONSTITUTION:A sliced apple is impregnated with a vacuum treating solution prepared by dissolving vitamin c, citric acid, common salt, granulated sugar, etc. in water. The above-mentioned apple is then subjected to vacuum treatment in a vacuum vessel to impregnate the fresh of the apple with the vacuum treating solution. The impregnated flesh of the apple is blanched and if desired, seasoned and then freeze-dried.</p> |
